Courgette fritters with cheddar are crispy on the outside, soft in the middle and made from things you’ve probably already got in the fridge. Four ingredients, one pan, done in about 15 minutes. I posted a photo on Instagram and people kept asking for the recipe so here it is.
Courgette Fritters with Cheddar cheese recipe and method.
- 2 Courgettes, grated (squeeze some of the liquid out)
- 200g cheddar cheese, grated
- 2 eggs
- 1 cup / 150g plain flour
- Coriander, optional (or swap for other herbs)
- Salt and Pepper

Put the courgette, cheese and 2 eggs in a bowl and mix. Then sift the flour in a bit at a time so you don’t get lumps in your fritters.
Heat a small amount of oil in a pan. Roll a bit of the mixture between your hands and flatten into little rounds. Put four in the pan at a time.
Wait until they are golden brown, or a little darker if you like them crispy, then flip.

If you don’t love courgettes, try carrots, potatoes (they come out like hash browns), sweet potatoes or even red onion and cheese.

How do you stop courgette fritters being soggy?
Squeezing the liquid out of the grated courgette before mixing is the key step. Courgettes hold a lot of water and if you skip this the fritters won’t crisp up properly. Wrap the grated courgette in a clean tea towel and give it a good firm squeeze over the sink.
Can you freeze courgette fritters?
Yes. Cook them fully, allow to cool, then freeze in a single layer on a baking tray before transferring to a bag. Reheat from frozen in the oven at 180 degrees for about 12 minutes and they come back up crispy.
What do you serve with courgette fritters?
They work brilliantly with a dollop of sour cream or Greek yoghurt alongside. Also great next to grilled fish or chicken, or just eaten straight from the pan as a snack, which is what usually happens in this house.
Do you need to salt courgettes before making fritters?
You don’t have to but it helps. Salting the grated courgette and leaving for 10 minutes before squeezing draws out even more liquid and gives you a crispier result. If you’re in a rush, just squeezing is enough.
