This courgette and tomato frittata is quick to make, four ingredients and about 10 minutes cooking time. We love omelettes, eggs and veggies so sometimes it makes sense to throw it all together. Works as a side dish with fish or as the main surrounded by a sweet salad.
Ingredients:

- 3 eggs
- 2 courgettes
- 4 to 5 small sweet cherry tomatoes
- 50g to 100g grated cheese

Method:
Grate your courgette and squeeze out some of the liquid. Crack your eggs into a bowl and beat well. Add the grated courgette. Slice up your tomatoes and add to the mixture. Cook on the hob at a reasonably high heat until you see a couple of bubbles appear on the surface. Turn the heat off, sprinkle over your cheese and place the pan under the grill. Once the cheese starts to bubble and brown, it’s ready.


I like to serve mine with black pepper, cottage cheese and a salad. The kids had theirs with pasta. You can bulk this out with onions, sliced meats and other greens. It’s a great base for many other egg dishes.
