Greek Spinach Pie Recipe – Spanakopita

Firstly I’d like to say I am not greek, so this isn’t likely to be as authentic as it could be. However, it’s a gorgeous summer recipe, easy to make with the kids and tastes great hot or cold.

To make Greek Spinach Pie –  Spanakopita, you’ll need:

4 sheets of filo pastry
200g Feta Cheese
2 Eggs
100g Spinach
50-75g Sundried Tomatoes
1/2 Red Onion
Garlic infused Olive Oil or Garlic Fry Light Spray

Lightly coat a frying pan with a little oil, while the oil is warming up, dice up your onion, slice up your sundried tomatoes and add them to the pan, then add your spinach and stir. Once you spinach is lightly wilted remove from the heat.

Leave to cool for around 5 or so minutes.

Chop your feta up, roughly as the size doesn’t really matter as it will be melted. In a bowl, mix your feta in with the spinach, sundried tomatoes, and onion mix. Beat your eggs into the mixture too.

Next, prepare your filo pastry. Begin by lightly oiling your oven dish, placing your first sheet in, oil that sheet, place a new one on top. Repeat that till you have 4 lightly oiled filo layers. Now pour your mixture into the middle.

Once your filling is all poured in, it’s time to fold the top. You should have a lot of excess filo around the edge of your oven dish, take all of the extra bits and fold them on top to make the lid of your Greek Spinach Pie –  Spanakopita.

As you can see I also lightly oiled the top as I went.

Cook for around 35-40 minutes, gas mark 4.

I cut it into slices and served hot and slightly melty, and we had leftovers cold the following day with a huge salad.
